Hello, I was wondering about your whole poussin, 2nd image from top (Spatchcock random weight 450-500 g). Has this been split (spatchcocked) or is this a whole bird? Is it called a spatchcock when split and a poussin when whole? I am looking to include whole poussin in a recipe book and I wanted to be sure that we can buy them whole for stuffing and wrapping etc.

The image is of a whole poussin (spatchcock) and are sold whole or in a range of cuts to supermarkets and independent butchers stores. Poussin is correct however they are referenced as spatchcock in Australia also.
