The Deboned Lemon and Oregano Spatchcock makes the perfect winter dish for you to enjoy, with very little effort required. If you are looking for a delicious side to enjoy with it, why not try one of these salads.
Warm Potato, Olive & Parmesan Salad
1. Toss 1kg halved chat potatoes in olive oil and roast in a hot oven for 45 mins or until golden.
2. Combine 5 sliced green onions with 2 chopped garlic cloves; 2 tablespoons each of olive oil, chopped fresh parsley, oregano and 1/2 cup chopped black olives.
3. Pour over the roasted potatoes and scatter with ½ cup shaved Parmesan. Season to taste
Grilled Zucchini and Feta Salad
1. Slice 4 zucchini into ribbons, brush with olive oil and lightly char grill.
2. Whilst the zucchini is cooking, soak 3 teaspoons of currants in water. Drain after 10 mins.
3. Toss zucchini with 1 tablespoon each of olive oil and lemon juice; the zest of a lemon; ½ cup fresh mint leaves; 50g crumbled feta; 1 tablespoon of pine nuts and the currants. Season to taste
